We're The Estate Dairy - a family-run team producing milk, cultured butter, cream and Greek-inspired yoghurt and one of only five family-run dairy businesses in the UK to have achieved B Corp certification. We started in 2016 with a simple conviction: that British milk deserves the same craft, traceability and care that's now expected of great coffee, wine or bread. Founded by husband-and-wife team Shaun and Rebecca Young, our story began with two complementary backgrounds. Rebecca grew up in a dairy farming family. Shaun spent five years in the coffee industry before realising that nobody was treating milk the way the best coffee was being treated. Rebecca's brother Andrew now heads up our cultured butter production, bringing with him eight years of butter-making experience. We don't own our own herd. Instead, we work in close partnership with a small network of family farms who share our ethos. Our milk and cream come chiefly from Phil Durbin and his family at Bickfield Farm in Somerset, where 320 mainly pedigree Guernsey cows graze 470 acres of grassland. Phil's family have tenanted Bickfield since 1930, and Phil took over the farm in 2002. Our cultured butter is churned on the historic Cholmondeley Estate in Cheshire, where we age the cream for over 60 hours, culture the butter for four full days using a bespoke Lactobacillus culture and a traditional Roversi churn and shape and wrap every retail log by hand. We're entirely Bovaer-free, we gently pasteurise but never homogenise and we were the first UK dairy to introduce large-format glass milk containers into retail in partnership with M&S. We also pioneered the use of refillable milk kegs for the food service sector. Today our cultured butter portions are supplied to prestigious hotels, restaurants, private member clubs and airlines; our 1kg plaques are used by some of the UK's leading bakeries and patisseries; and we wholesale across London, Oxfordshire and Bristol.
