Mrs Temple's Cheese, Wighton, Norfolk
Wighton, near Wells-next-the-Sea, Norfolk
Mrs Temple's Cheese is made at Copys Green Farm in Wighton, a few miles inland from Wells-next-the-Sea on the North Norfolk coast, from the milk of the farm's own Brown Swiss cows. The farmhouse is seventeenth century and listed. The cheese came much later. Catherine and Stephen Temple run the farm and the dairy together. The herd eats lucerne grown on the same ground, and an anaerobic digester on the farm turns its waste into the renewable energy the cheese is made with. Field, cow, dairy, digester, field again. Binham Blue is the best seller, by some distance and started in the farmhouse kitchen. Copys Cloud, Walsingham and Wighton make up the rest of the range. None of it is sold at the farm gate, so look for it in the delis and farm shops of North Norfolk. Algy's at Bintree carries it, usually on the same shelf as Ferndale's Norfolk Dapple and Wilton Farm's Norfolk White Lady, which makes for a very good afternoon. A blue cheese with a parish on the label and the herd still grazing behind it. That ought to be run of the mill. Nowadays it really isn't.
